Chez Duclos dairy farm, Aosta Valley

The family-run Duclos family farm was established in 1972 and has been producing high quality dairy products typical of the Aosta Valley ever since.

The pastures, dairy and maturing warehouses are located in the Gran San Bernardo Valley. Here, time seems to have stood still; the cows, as in the past, are taken up to the mountain pastures during the fine season, so that their milk can acquire that typical flavour of mountain herbs.

With the passage of time, there have been evolutions in the production process of cheeses and dairy products in general, but the procedure for the production and processing of Fontina remains the same as ever. This allows the typical characteristics of a product rich in history to be maintained.

Anti-scalding safety is ensured by the range of progressive mixers and thermostatic mixers. In the former, turning the lever from the closed position starts the water supply from cold to mixed to hot. Thermostatic mixers guarantee the stability of the set water temperature and are equipped with a safety lock at a temperature of 38°C and an anti-scalding system that blocks the supply in the event of a lack of cold water.
